Easy Spanish Rice


This is a great addition to spice up any meal. Here at the hungry raider, we add it to Salsa Chicken as a perfect side.

Prep Time: 5 Minutes
Total Time: 45 Minutes
Skill Needed: Apprentice

Ingredients:

  • 1 cup uncooked rice
  • 1 medium onion, chopped
  • 2 tablespoons vegetable oil
  • 2 1/2 cups water
  • 1 (8 ounce) can tomato sauce
  • 1 small green bell pepper, chopped
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon chili powder
  • 1/8 teaspoon garlic powder

Directions:

  1. In a large skillet, heat the oil over medium heat.
  2. Add rice and onion and cook (about 5-10 minutes) stirring occasionally, until rice is golden brown and onion is tender.
  3. Stir in remaining ingredients and bring to a boil.
  4. Reduce heat, cover and simmer for about 30 minutes, stirring occasionally, until rice is tender.

Salsa Chicken


Another super simple recipe for the Apprentice Cook. This time we are spicing up some plain Chicken with some south of the border flavor. Add some Easy Spanish Rice and enjoy!

Prep Time: 20 Minutes
Total Time: 55 Minutes
Skill Needed: Apprentice

Ingredients:

  • 4 boneless skinless chicken breast halves
  • 4 -5 teaspoons taco seasoning mix
  • 1 cup salsa
  • 1 -1 1/2 cup shredded cheddar cheese
  • 2 tablespoons sour cream (optional)

Directions:

  1. Preheat oven to 375 degrees F.
  2. Place chicken breasts in a lightly greased 9x13 inch baking dish.
  3. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
  4. Bake at 375 degrees F for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
  5. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.
  6. Top with sour cream if desired, and serve.

Crock Pot Cheeseburger Dinner


Mmmmm Who doesn't love Cheeseburgers? As a raider cooking them before raid time can sometimes be difficult though. Getting home at 6, cooking up burgers, eating and cleaning up by 7 can be a stretch and let's face it, Fast Food = quick, yummy but unhealthy & expensive if it's a regular thing. So here's a quick, easy alternative that even an Apprentice Cook can make.

Prep Time: 15 Minutes
Skill Needed: Apprentice

Materials to Gather:
  • 1 -1 1/2 lb ground beef
  • 1 medium onion, coarsely chopped
  • 1 (5 ounce) box au gratin potato mix
  • 1 (10 ounce) can cream of mushroom soup
  • salt and pepper
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 4 slices American cheese (4 thick slices or 8 thin slices)

Directions:

  1. In a skillet, brown the ground beef with onions; drain. Place potatoes and seasoning mix in the slow cooker; cream of mushroom soup. Top potato mixture with ground beef and onions; salt and pepper to taste. Dot evenly with ketchup and mustard; top with cheese slices. Cover and cook on low for 4 to 6 hours.
  2. Note: Feel free to add a vegetable to this recipe. Simply add it with the soup. This recipe could use any boxed potatoes wit success. Feel free to season hamburger as you would if you were making cheeseburgers.
